We were off! As the day wore on, time slowed. We relaxed. The dark of night descended. I was on watch in the cockpit of <em>Simple Life<\/em>, our Island Packet 37, while my husband, Joe, rested below. As we surged forward into blackness, my mind wandered. Besides imagining plowing into a snoozing whale or striking a submerged container, I was \u00adcontemplating something pleasant: fresh shrimp.<\/p>\n\n\n\n<iframe id=\"gkstfcayky\" src=\"https:\/\/cruisingworld.dragonforms.com\/gkstfcayky\" scrolling=\"no\" style=\"width:100%;height:165px;border:none;overflow:hidden;\"><\/iframe>\n\n\n\n<p>We\u2019d departed Port Royal Island, South Carolina, that morning, bound for St. Marys Inlet at the Georgia-Florida border and, ultimately, Fernandina Beach. Now we were fast approaching what I call the \u201cland of shrimp.\u201d It\u2019s a hub where, thanks to the commercial boats plying the waters day and night, you can find an abundance of the freshest, finest shrimp you\u2019ve ever tasted.&nbsp;<\/p>\n\n\n\n<p>During seasonal migrations south from our home port of Pawtuxet Cove, Rhode Island, we\u2019ve logged numerous overnight passages. The Intracoastal Waterway is one of the most popular routes south from New England, but we\u2019ve learned over the years that sailing offshore, while sometimes tiring, is generally less stressful. Especially in the Georgia marshes along the ICW, shoals abound, requiring constant vigilance with charts and at the helm to avoid groundings. Offshore, we have plenty of water.<\/p>\n\n\n\n<p>The sun was rising as we approached the border. From my perch at the helm, sunrise was a welcome sight. Joe got up and prepared to take his watch, and I steered <em>Simple Life<\/em> west toward the inlet. Conditions overnight had been manageable, but now we had a stronger breeze. Seas began building just as Joe appeared, to take the helm. Soon, a large following sea ushered <em>Simple Life<\/em> down each wave toward the inlet.&nbsp;<\/p>\n\n\n\n<p>I spotted three local shrimp boats \u00adalready plying the waters at daybreak, and thought about that night\u2019s dinner: shrimp Mozambique. I\u2019d first sampled this delicious dish in Portuguese restaurants in Fall River and New Bedford, Massachusetts, not far from our home port. I loved it so much that it inspired me to make my own version.<\/p>\n\n\n\n<p>The last couple of miles into the inlet seemed to take hours. After a well-earned nap, I spent the early afternoon zipping ashore in the dingy, headed for Atlantic Seafood Fish Market.&nbsp;<\/p>\n\n\n\n<p>Located directly on the shrimp-boat docks, it has some of the freshest shrimp on the Eastern Seaboard. The crustaceans I&nbsp;bought probably were swimming beside us as we aimed for the inlet that morning.<\/p>\n\n\n\n<p>This recipe, rooted in the former Portuguese colony of Mozambique in East Africa, is rich with spices and flavor. I\u2019ve shared it with many cruising friends who now regard it as their go-to recipe for entertaining guests aboard, or whenever they\u2019re lucky enough to find fresh shrimp.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Shrimp Mozambique <em>(serves 2)<\/em><\/h3>\n\n\n\n        <section class=\"hydra-container\">\n\n\t\t\t                <div class=\"hydra-canvas\">\n\t\t\t\t\t<img decoding=\"async\" width=\"800\" height=\"600\" src=\"https:\/\/www.cruisingworld.com\/wp-content\/uploads\/2024\/05\/Shrimp-Mozambique-17_edit-1024x768.jpg\" class=\"hydra-image\" alt=\"shrimp Mozambique on a serving dish\" sizes=\"(max-width: 1400px) 100vw, 1400px\" srcset=\"https:\/\/www.cruisingworld.com\/wp-content\/uploads\/2024\/05\/Shrimp-Mozambique-17_edit-1024x768.jpg 1024w, https:\/\/www.cruisingworld.com\/wp-content\/uploads\/2024\/05\/Shrimp-Mozambique-17_edit-300x225.jpg 300w, https:\/\/www.cruisingworld.com\/wp-content\/uploads\/2024\/05\/Shrimp-Mozambique-17_edit-768x576.jpg 768w, https:\/\/www.cruisingworld.com\/wp-content\/uploads\/2024\/05\/Shrimp-Mozambique-17_edit-1536x1152.jpg 1536w, https:\/\/www.cruisingworld.com\/wp-content\/uploads\/2024\/05\/Shrimp-Mozambique-17_edit.jpg 2000w\" \/>                <\/div>\n\t\t\t\n\t\t\t\n            <figcaption class=\"caption margin_top_xs full border_1 hydra-figcaption\">\n                <span class=\"hydra-image-caption\">Shrimp Mozambique<\/span>\n                <span class=\"article_image_credit italic margin_right_xs\">Lynda Morris Childress<\/span>\n\n\t\t\t\t            <\/figcaption>\n        <\/section>\n\t\t\n\n\n<ul class=\"wp-block-list\">\n<li>1 packet <a href=\"https:\/\/outclick.co\/l\/01jmx0hscha8eg4gme6mk9axph\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">Saz\u00f3n Goya con Azafran<\/a> or 1\u00bd tsp. homemade shrimp spice mix (see below)\u00a0<\/li>\n\n\n\n<li>3 cloves garlic, minced&nbsp;<\/li>\n\n\n\n<li>\u00bc-\u00bd tsp. crushed red pepper, or to taste<\/li>\n\n\n\n<li>\u00bd tsp. salt, kosher if possible<\/li>\n\n\n\n<li>\u00bc tsp. pepper, or to taste<\/li>\n\n\n\n<li>1 2-14 medium or large fresh shrimp, peeled and deveined*<\/li>\n\n\n\n<li>3-4 <a href=\"https:\/\/outclick.co\/l\/01jmx0kf2zm428d1v7qnn2pq7w\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">threads saffron<\/a>\u00a0<\/li>\n\n\n\n<li>\u00bd cup beer&nbsp;<\/li>\n\n\n\n<li>1\u00bd Tbsp. butter&nbsp;<\/li>\n\n\n\n<li>1 Tbsp. olive oil&nbsp;<\/li>\n\n\n\n<li>1 medium or large sweet onion, chopped finely&nbsp;<\/li>\n\n\n\n<li>1\u00bd Tbsp. freshly chopped parsley, or 1 Tbsp. dried&nbsp;<\/li>\n\n\n\n<li>1\u00bd tsp. additional butter<\/li>\n\n\n\n<li>1 Tbsp. <a href=\"https:\/\/outclick.co\/l\/01jmx0jscn01n6w3c1sh91dy8r\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">cornstarch<\/a> dissolved in \u00bd cup cold water\u00a0<\/li>\n\n\n\n<li>3 green onions, sliced for garnish&nbsp;<\/li>\n\n\n\n<li><em>* Frozen shrimp, thawed, can be substituted.&nbsp;<\/em><\/li>\n<\/ul>\n\n\n\n<div style=\"height:25px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>In a small mixing bowl, combine either Saz\u00f3n Goya or 1\u00bd tsp. homemade spice mix with garlic, red pepper, salt and pepper. Mix with a fork and set aside.&nbsp;<\/p>\n\n\n\n<p>If using fresh shrimp, sprinkle with salt and pepper, and set aside. If using frozen shrimp, skip the salt.&nbsp;<\/p>\n\n\n\n<p>Immerse saffron threads in beer, and set aside.<\/p>\n\n\n\n<p>In a <a href=\"https:\/\/outclick.co\/l\/01jmx0npfdqvtngqgdwvgwcnaw\" target=\"_blank\" rel=\"noreferrer noopener\">large saute pan<\/a>, heat 1\u00bd Tbsp. butter and the olive oil until melted. Add onion, and cook over medium heat until translucent. Add spice-garlic-red pepper mixture. Cook while stirring, 1 to 2 minutes. Add the beer with infused saffron, bring to a boil, and \u00adreduce for 2 minutes.&nbsp;<\/p>\n\n\n\n<p>Add the shrimp, parsley and remaining butter. When shrimp have begun to curl and turn pink, remove them to a bowl, then cover.&nbsp;<\/p>\n\n\n\n<p>Add cornstarch-water mixture to the pan, stirring constantly until the sauce is \u00adthickened. Return the shrimp to the sauce. Stir until warmed.&nbsp;<\/p>\n\n\n\n<p>Serve immediately over rice. Garnish with&nbsp;green onions and additional chopped parsley.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Homemade Shrimp Spice Mix<\/h3>\n\n\n\n<p>If not using Saz\u00f3n Goya, mix together in advance: 1 Tbsp. each of ground coriander, ground cumin, turmeric, garlic powder, and kosher salt with 2 tsp. ground oregano and 1 tsp. ground black pepper.
